Badhusha

Badhusha:

    Badhusha is a sweet loved by most of the people. To be frank I don't  love this sweet badhusha very much. But I tried for this diwali , because i was tempted to make this sweet when i came accross the diwali sweet recipes in net. It came out well and now I started to love badhusha.. Let us see how to make this sweet.

Ingredients:


  1. Maida/ All purpose flour -1 and 1/2 cup
  2. Butter - 1/4 cup
  3. Oil  - 1/8 cup
  4. Curd - 2 tbsp
  5. Cooking soda - 1/2 tsp
  6. water 1/4 cup (approx)
  7. Oil - For deep frying
  8. Ghee - 1 tsp

Sugar Syrup:


  1. Sugar - 1/2 cup
  2. Water - 3/4 cup
  3. Cardamom powder - a pinch
  4. Saffron - few
  5. Lemon juice - few drops

Method:


  • Heat a pan and add the butter to it, melt the butter and switch off the stove.

  • In a mixing bowl add the melted butter, curd, oil, cooking soda, sugar , and mix well using a hand whisk. 

  • Now add the Maida and mix well using the hands. The texture of the mixed flour would look like bread crumbs and the consistency will be like puttu flour. 


  • Add water to make it as a soft dough. Better wet your hands and knead, wet it often instead of adding water, since to get the right dough consistency.
  • Let it be aside for atleast 15 mins.
  • After 15 mins knead the dough again and divide it to a equal balls and make a shape in it. You can make it in regular shape.
  • Add sugar and water in a pan and make sugar syrup to get the one string consistency. After you get the right sugar syrup consistency add cardamom powder, saffron and few drops of lemon juice(lemon juice it added to the sugar syrup to avoid crystalization).


  • Heat oil in a pan for deep frying (don't heat the oil in full flame, let it be heat in low flame itself). Check the oil temperature by droping a small amount of dough in it and it should rise up immediately this is the right temp.
  • Now add 2 or 3 badhushas and switch off the stove immediately.let the badhusha be cooked in the pre- heated oil. When the bubbles from the badhusha stops, switch on the stove and keep it in a low flame.
  • Cook both the sides till light brown.


  • Drain the excess oil using tissue paper and drop the badhusha in the sugar syrup and dip both the sides well by fliping it. Let it be immersed till the next set of badhusha is ready. Then take out from the sugar syrup. 
  • Now our badhusha is ready!!!
