Prawn Fry

Prawn Fry:

  Prawn Fry is a yummy combo with rice and curry. Even a dal curry will do. It goes well with any meals. After coming to chennai i had a chance to taste the prawn for the first time in my life. (I tasted it in a hotel).Since before 6 years  my hubby and me went  to a hotel and he asked for trying the prawn. Then we searched in menu and ordered for prawn golden fry. Yes we got it after 30 min of ordering and i was eager to taste it. It was a yummy golden color with the steam over it. OMG !!!!! On my first tasting of that prawn, it made me to hate prawns. After some months i was suppose to have dinner in our friends house and again a chance to taste prawns. I refused a lot to taste it, but they assure that it tastes good. Then tried with a piece of prawn..... Wow!!! I really started to like prawn. Cleaning of prawn is very important. Otherwise it smells bad after cooking. Now i started to cook different kinds of dishes using prawn. Now let us see how to make prawn fry.

Ingredients:


  1. Prawn - 1/2 kg
  2. Egg - 1(optional)
  3. Corn flour - 1 tbsp
  4. Rice flour - 1 tbsp
  5. Chilli powder - 1 tsp
  6. Turmeric powder - 1tsp
  7. Cumin powder - 1 tsp
  8. Garam masala - 1 tsp
  9. Salt - as needed
  10. Lemon - 1/2
  11. Oil - for deep frying
  12. Bread crumbs - 1/2 cup

Method:


  • De-vein prawns and wash it well.
  • Take a mixing bowl and add corn flour, rice flour, chilli powder, turmeric powder, cumin powder, garam masala, salt and egg and mix well by adding little amount of water.
  • Add the prawns to the masala mixture and marinate for atleast 30 min.
  • Heat oil in a pan for deep frying, once the oil heats up, add the prawns one by one by coating it with the bread crumbs. Fry it in low medium flame.



  • Take it out once it is done .

Fish Pepper Fry

Fish Pepper Fry:

    One who love fish will definitely love this recipe and I promise , the taste of the fish pepper fry will be a nice treat to your tasty buds. Once you tried this recipe then you will go other round to have this.I love this pepper fry very much, no more masalas. This recipe is made with simple ingredients . Yeah I'm sure this is healthy too. You can bake or grill the fish after marinating it. Here I have fried the fish with little oil in tawa. Already I have posted the fish fry with spices and masalas this recipe is different from that. Now let us see how to marinate and fry the fish.

Ingredients:


  1. Fish - 1/2 kg
  2. Pepper - 2 tsp
  3. Lemon - 1 
  4. Turmeric powder - 1tsp
  5. Salt - as required
  6. Oil - for frying(shallow fry)

Method:


  • Clean and wash the fish. (I'm using the whole fish , that is not compulsory you can use the sliced one too.)
  • Grind the pepper in the mixer.(Don't use ready made powders or use the stock available in your home. For better taste crush the pepper corns).
  • Take the pepper powder, turmeric powder, salt and lemon juice and apply it on the fish.
  • Marinate in the fridge for atleast 3 hrs.
  • Heat oil in a tawa and put the fish in it with low flame.
  • Flip the fish after 5 min and cook the other side too.
  • Now our fish pepper fry is ready to serve.

Chettinad Prawn Fry / Chettinad Eeral Fry / Eeral(Prawn) recipe

Chettinad Prawn Fry / Chettinad Eeral Fry / Eeral(Prawn) recipe:

 This Prawn Pepper Fry is easy to make and it consume less time to cook with simple ingredients.

Ingredients:


  1. Prawn - 250 g 
  2. Onion - 1 (finely chopped)
  3. Tomato - 1 (finely chopped)
  4. Curd - 4 tbsp
  5. Ginger garlic paste - 1 tbsp
  6. Garlic- 4 cloves
  7. Fennel seeds (Perunjeeragam) - 1 tsp
  8. Turmeric powder- 1 tsp
  9. Chilli powder - 1 tsp
  10. Pepper powder -1 tbsp
  11. Coriander powder -1 tsp
  12. Cinnamon - 1 inch stick
  13. Cloves - 2 nos
  14. Cardamom - 2 nos
  15. Coriander leaves - few
  16. Curry leaves - few
  17. Oil - 1 tbsp


Method:


  • Wash and devein the prawns.
  • Crush the garlic using hand pestle.
  • Heat oil in a pan and add cardamom, cinnamon , cloves , Fennel seeds and allow to temper.Add the dry chillies.

  • Add crushed garlic and curry leaves.
  • Add chopped onions , tomato and saute for a minute.

     

  • Add the deveined prawn and mix it.
  • Let it cook for a 5 minutes.
  • Now add the curd to it, after adding the prawn itself it will leave water so need not want to add water. Cook till all the water gets evaporated.
  • Now add the turmeric powder , chilli powder, pepper powder, coriander powder and mix well so that the masala will be coated to the prawns. Cook for another 6-7 minutes.
  • Switch off the stove and add the pepper powder and mix well .
  • Garnish with coriander leaves.
  • Now our chettinad prawn pepper fry is ready.

Fish Fry

Fish Fry:

 Fish Fry is a nice starter and also a side for a meal. We can make fish fry with simple ingredients . The only thing is marination . At-least we want to marinate the fish with the masalas for 1 hr under refrigeration.Simple easy and traditional recipes are uploaded in the blog, like wise this is a easy one. Let us see how to make this fish fry.

Ingredients :


  1. Fish - 1/2 kg
  2. Turmeric powder - 1 pinch
  3. Red Chilli powder - 1 tbsp
  4. Ginger garlic paste - 1 tsp
  5. Corn flour - 1 tsp
  6. Salt - as needed
  7. Lemon - 1

 Method:


  • Wash the fish with the little salt.
  • Take the above ingredients in a bowl and mix it with some oil and water to make a paste.
  • Add the fish to the mixture and marinate for 1 hr.(Let it be in the fridge )
  • Now add oil in a pan/tawa and fry the fish on both the sides.
  • Our Simple fish fry is ready to serve.

Fish Curry / Meen Kulambu

 Fish Curry



          Fish curry is the simple cooking when compared to other non-veg recipes. This was my mom’s style of cooking sea fish.

Ingredients:

·        Fish -1/2 kg
·        Oil -2tsp
·        Onion-2 finely chopped
·        Tomatoes -2(finely chopped)
·        Chilli powder-2tsp
·        Kulambu masala powder-3tsp
·        Mustard -1 tsp
·        Fenugreek seeds(vendhayam)-1/2tsp
·        Tamarind- 1 lemon size
.     Green chillies-2 nos
.     Coriander leaves and curry leaves - for garnishing

For grinding:
·        Coconut-1/2 cup grated
·        Small onions-1 cup


Method:

1.     Wash fish and keep aside.
2.     Soak tamarind in hot water.
3.     Heat oil in a pan and temper with mustard seeds, urad dhal and fenugreek seeds.


4.     Add chopped onions and fry till golden brown.
5.     Add the tomatoes and mix well.


6.     Now add the chilli powder and kulambu masala powder and sauté it.

7.     Add coconut onion paste and add some water.

8.     Allow it to boil.
9.     Now add the tamarind juice and mix.
10.  Allow this gravy to boil well.
11.   Now add the fish one by one gently.

12.   Let it boil.
13.After first boil make it in low flame and close the lid.
14. After 10 min gently mix the gravy then allow for another 5 min in low flame and close the lid.
15.Add the chillies
16. Garnish with coriander and curry leaves.


Fish curry is now ready to serve!!!!!!

Note:
·        If not having home made kulambu masala powder use aachi mixed kulambu masala powder.

Prawn Manchurian / Eeral manchurian /Prawn recipe

Prawn Manchurian


Ingredients:
 Marinate:
·        Prawn -1/2kg
·        All Purpose Flour/Maida-2tsp
·        Cornflour-2tsp
·        Ginger Garlic Paste-1tsp
·        Soya sauce-1tsp
·        Green chilli sauce/paste-1tsp
·        Vineger/Lemon juice-1/2tsp
·        Red Chilli powder-1/2tsp
·        Food Colour-1 pinch(optional)
·        Ajinimoto-1 pinch(optional)
·        Salt - as needed
To Prepare:
·        Oil-4tblsp(required for frying)
·        Mustard-1tsp
·        Onion -2 (chopped)
·        Green Capsicum-1/2 enough
·        Garlic -4-5 nos(finely chopped)
·        Soya sauce-1tsp
·        Tomato sauce-1tsp
·        Green Chillies-1(finely chopped)
·        Tomato-2
·        Red Chilli sauce-1tsp
·        Ginger Garlic paste-1tsp
·        Red Chilli powder-1tsp
·        Sugar-1pinch
·        Ajinomoto(optional)
·        Corn starch-2tsp
·        Salt-as needed
Method:
1.     Deshell and Devein prawns and wash it.
2.     Add the ingredients mentioned in the marinate table and mix well to make a tight batter.  Marinate for 1 hr.

5.     Make tomato puree.

7.     Heat oil in the pan and deep fry prawns.(Dont over cook it).

10.Drain excess oil using paper.
11.Heat oil and allow mustard to temper.

13.Add chopped onions,Green capsicum,green chillies, garlic and saute it for a minute.
14.Add ginger garlic paste and saute it.
15.Now add the tomato puree.

17.Now add soya sauce,tomato sauce,red chilli sauce and saute it.
18.Add red chilli powder, a pinch of sugar and ajinomoto and saute it.
19.Add cornstarch and salt.
20.Let it come to boil stage.

22.Now add the fried prawns.
23.Stir it gently and make simmer for 3 min.

25.Switch of the stove and garnish with coriander leaves.

Note:

  To make dry prawn manchurian avoid adding corn starch.
