Vegetable Briyani/Vegetable Biriyani

Vegetable Briyani :

        This recipe is a quick one which you can make at the morning for your husband's , kids lunch box. Vegetable briyani is easy to make, the only thing is you want to have ginger garlic paste in your hand. I use to store the Ginger Garlic paste in the fridge for more than a week and I never go with the ready made ginger garlic paste available in stores. Since it can be used for kurmas and for other recipes I use to store in the refrigerator. This recipe will consume less time to make . My kids( Seyon and Raini ) loves this yummy Briyani. Even they don't need of any other side dish too. Hope the list seems to be a long one but don't worry every spices which I have listed here will be in your kitchen. I swear you!!. Now let us see how to make this yummy and finger licking  briyani.

Ingredients:


  1. Vegetables - Beans, carrot, potato, green peas, cauliflower(each 100 g)
  2. Onion - 1 medium size(chopped)
  3. Green Chillies - 2
  4. Tomato - 1 
  5. Ghee - 1 tsp
  6. Oil - 1 tbsp
  7. Cumin seeds - 1/2 tsp
  8. Fennel seeds  - 1/2 tsp
  9. Cinamon - small stick
  10. Cardamom - 2 nos
  11. Cloves - 2 nos
  12. Bay leaf - 1 no
  13. Ginger Garlic paste - 1 tsp
  14. Basmathi rice - 2 cups
  15. Chilli powder - 1 tsp
  16. Cumin powder - 1 tsp
  17. Coriander powder - 1 tsp
  18. Coriander leaves and mint leaves - one handful
  19. Salt - as required

Method:


  • Wash the basmati rice and keep it aside.
  • Chop the vegetables, onion, tomato and be ready with it.
  • Take a pressure cooker and heat ghee and oil in it.
  • Add the spices cardamom, cinnamon. cloves, bay leaf cumin seeds and fennel seeds. Let it temper.
  • Now add the chopped onions and saute for a minute.
  • Add Tomato chopped in cubes.
  • Add the ginger garlic paste and cook till the raw smell disappears.
  • Now add all the chopped vegetables and saute till.

  • Saute for a minute.
  • Now add the chilli powder, cumin powder, coriander powder and add the mint leaves and coriander leaves and mix it well.
  • now add the washed basmati rice and add 4 cups of water. 
  • Add the required amount of salt and  close the lid and put the whistle.
  • Wait for a whistle and then make it in a simmer for  5 minutes.
  • Wait till the whistle settles down. 
  • You can serve this with onion raitha.

Coconut Rice / Thengai Satham / Tiifin Box recipe / Lunch Recipe:

    Coconut Rice is a very simple recipe , For school going kids and office going people this rice can be packed in the lunch box and the taste and flavour of the coconut rice is awesome. This can be even prepared by bachelors who even dont know any thing about cooking. Here we are going to add the cooked mixture of coconut in the steamed rice.  Let us see how to cook our recipe Coconut Rice today.


Ingredients:

  1. Steamed Rice - 4 cups
  2. Coconut - 1 1/2 cups (grated)
  3. Bengal gram(kadalai paruppu) - 1 tbsp
  4. Cashew nuts - 1 tbsp
  5. Shallots(small onions) - 7-8 nos
  6. Mustard seeds - 1 tsp
  7. Urad dhal - 1 tsp
  8. Cumin seeds - 1 tsp
  9. Dry Chillies - 3-4 nos
  10. Ghee - 1tsp
  11. Oil - 2tsp
  12. Curry leaves for garnish

Method:


  • Heat a kadai and pour oil and 1 tsp of ghee in it.
  • Allow mustard seeds , urad dhal and cumin seeds to temper.
  • Add the cashew nuts and bengal gram and saute till it turns the color.
  • Add chopped shallots, dry chillies, curry leaves and cook till the onions are translucent.

  •  Add grated coconut and mix well .
  • Saute the mixture for 3-4 min in low flame.
  • Switch off the stove and add the mixture to the steamed rice and mix it well.


  • Now our coconut rice is ready.

Tomato rice / Thakkali Satham / Tiffin box recipe / Simple tomato rice:

            Tomato rice can be done in two different methods. One way is combined cooking and the other way is mixing of the tomato gravy with the steamed rice. Here i am going to demonstrate the second method which is my hubby's favorite food. He loves tomato rice only when it is cooked in the second method. It is very easy to make this recipe.

Ingredients:


  1. Tomato - 4 finely chopped
  2. Onion - 1 medium size (finely chopped)
  3. Green Chillies - 2 nos
  4. Ginger Garlic paste -1 tsp
  5. Mustard seeds - 1 tsp
  6. Urad dhal - 1 tsp
  7. Cumin seeds (jeeragam)- 1 tsp
  8. Fennel seeds (perunjeeragam)- 1 tsp
  9. Cloves - 2 nos
  10. Cardamom - 2 nos
  11. Cinnamon - 1 small stick
  12. Bay Leaf - 2 nos
  13. Red chilli powder - 1 tsp
  14. Turmeric powder - 1 pinch
  15. Coriander leaves - for granish
  16. Salt - as required

Method: 



  • Heat oil in a pan and allow mustard seeds , urad dhal to temper.
  • Now add the cumin seeds,fennel seeds, cloves, cardamom, cinnamon and bay leaf.
  • Now add the chopped onions and saute till translucent.
  • Now add the chopped tomatoes and ginger garlic paste and cook till it is mashed well need not want to add water.
     
  • Add Turmeric powder, chilli powder , salt and mix well.

  • Saute for a minute and switch off the stove. now add coriander leaves .
  • Add this mixture to the boiled rice and mix well.

  • Add few drops of ghee in it.
  • Now our tomato rice is ready.

Lemon rice / Lemon Satham / Tiffin box recipes / Simple lemon rice

Lemon rice is a recipe usually made for school going and office going lunch box. If you wake up late in the morning and not having any idea for packing lunch you can go for this recipe. It even tastes well with the flavour of lemon. This recipe is even easy to make.

Ingredients:



  1. Lemon - 1
  2. Oil  - 2 tsp
  3. Bengal gram / Kadalai paruppu -2 tsp
  4. Mustard seeds - 1 tsp
  5. Urad dhal - 1 tsp
  6. Dry Chillies - 4 nos
  7. Cumin seeds - 1/4 tsp
  8. Curry Leaves - For temper
  9. Turmeric powder - 1 pinch
  10. Asafoetida - 1 pinch
  11. Cooked Rice -  as needed

Method:


  • Squeeze lemon and remove the seeds from the extract.
  • Now add turmeric powder and asafoetida to the lemon extract , mix well and keep it aside.
  • Heat oil in a pan and allow mustard seeds , urad dhal and cumin seeds to temper.
  • Now add Bengal gram and wait it is fried in the oil.
  • Add Dry chillies and curry leaves.
  • Switch off the stove and remove the pan from the stove.
  • Now add the lemon extract and mix with the spoon.
  • After mixing it immediately pour this to the cooked rice and mix well .
  • Now our lemon rice is ready.
