Cooker Sponge Cake

Sponge Cake:

      Cake is now very simple to make in your home without oven. The only thing you need for making this cake is our pressure cooker other than the ingredients.Very easy and yummy cake can be made using this pressure cooker. I have tried this recipe for many times and it comes out well with awesome taste. Now the recipe is for you. Try this at home and enjoy tasting a fluffy sponge cake.

Ingredients:


  •  Maida - 2 cups
  • sugar - 1.5 cups
  • Eggs - 2
  • Unsalted Butter - 50g
  • Milk - 1 cup
  • Baking powder - 1 pinch
  • Baking soda - 1 pinch
  • Salt - 1/8 tsp
  • Vanilla essence 1 tsp

Method:

Follow the instructions as in the method to get soft and delicious sponge cake.

  1. As we pre-heat the oven here also we are going to pre-heat our pressure cooker.Here you need Pressure cooker , separator plate. Place the pressure cooker in the stove and keep the separator plate and close with the lid. Need not want to put the whistle .(Throughout the recipe you wont need whistle.)Pre heat it in low flame.
  2. Now spread 6 - 7 sheets of news paper , take the sieve and add 2 cups of maida, baking powder,baking soda, salt and sieve it for at least 6 times.Here I use news paper sheets hence it would be easy to transfer to the next sheets each time. 


  3. Keep the sieved flour aside
  4. Take the sugar and grind in the mixer to make soft powdered sugar and keep it aside.
  5. Take a pan and add 1 cup of boiled and cooled milk and add unsalted butter in it and keep in the low flame just to melt the butter. Once the butter gets melted switch off the stove.
  6. Take a mixing bowl and break the egg yolks and beat it for 10 min using electric beater(If you don't own electric beater then need not worry beat it in the mixer till the egg gets creamy texture)
  7. Now add the powdered sugar and again beat it for 10 min.
  8. Add the sieved flour and mix gently using the wooden/silicone stapula.
  9. Add the butter melted milk in it and mix gently to make a smooth batter.
  10. Grease the cake tin using butter and dust the pan with the flour.(oops !!! Not even having a cake tin  :-)  use any pan you like. I use the cooker pan which come along with the cooker.)

  11. Pour the batter in the grease tin and tap it to release the air bubbles.
  12. Open the cooker lid and place the tin carefully and close the lid. 
  13. Make the flame to medium low flame.
  14. Set the timer to 45 min.
  15. Check the cake in 45 minutes using a tooth pick if it comes clear then switch off the stove and allow it to cool. 

Serve it by putting slices.

Carrot Burfi

Carrot Burfi:  

      Carrot Burfi is also know as gajar ka burfi it is a easy sweet recipe made with simple ingredients. It tastes well and kids will sure love this burfi. Hope many mom's will be thinking how to give vegetables to the fussy eating kids. this is nice way of giving carrot to your kids, sure they will finish their plate. Here in this recipe I have added sugar, You can add natural sugar instead of adding white sugar too. 
      Now let us see how to made a delicious burfi using carrot.

Ingredients:

  1. Carrot - 3 cup
  2. Coconut - 1/2 cup
  3. Ghee - 3 tbsp
  4. Milk - 1 cup
  5. Sugar - 3/4 cup
  6. cardamom powder - a pinch
  7. Cashew nuts - few

Method:


  • Grate the carrot and coconut and keep it ready.
  • Grease a plate with ghee and keep it aside.
  • Dissolve sugar and make a syrup with one consistency.
  • Now add the grated carrot and coconut and mix well.

  • Add the cardamom powder and stir till it leaves the sides of the pan.
  • switch off the stove and transfer it to the ghee greased plate.

  • Sprinkle chopped pistas/almonds/cashews.
  • Mark squares and allow it to cool.
  • Take out from the plate and serve.

Cornflour halwa /Bombay Karachi Halwa

Cornflour Halwa:

Cornflour halwa is also known as Bombay karachi halwa. This halwa is easy to make and it tastes well.For this halwa I have used yellow food color. You can use any color of your choice but traditionally yellow, orange and red colors are used. Let us see how to make cornflour halwa recipe.

Ingredients:


  1. Cornflour - 1/2 cup
  2. Water - 1 and 1/2 cups
  3. Orange/yellow food color - 1 pinch
  4. Sugar  - 1 cup  
  5. Cashew nuts / Almonds - 1/4 cup
  6. Cardamom powder - 1 pinch
  7. Dry Ginger powder - 1 tsp
  8. Ghee - 2tbsp

Method:


  • Grease a plate with ghee.
  • In a pan add 1 tsp of ghee and add badam and cashews and fry it till brown.
  • Add sugar in a pan and 1 cup of water and allow it to boil. Let the sugar syrup thickens, no need to bring it to the string consistency.

  • Meanwhile in a mixing bowl add the cornflour and 1 and 1/2 cup of water, food color and mix well without lumps and keep aside.
  • After the sugar syrup thickens add the cornflour mixture and mix well and make the stove in the low flame. Stir the mixture continuously ,you can see the mixture gets thickens.

  • After the mixture thickens add ghee and mix well.

  • Now add the fried cashews and badam , cardamom powder, dry ginger powder and mix well.
  • When the mixture gets thickens , it will not stick to the pan, this is the right consistency.

  • Pour this mixture to the ghee greased plate and keep it aside. Let it cool.

  • When it cool completely cut the halwa in squares.

Sweet diamond cuts / Maida Biscuts/Diamond cuts

Sweet diamond cuts / Maida Biscuits:

   A traditional sweet biscuit recipe even a kid can do is our sweet diamond cuts.When is was in my mum's house i used to do this often since it is a nice snacks. It is easy to make and it consume less time for making this sweet diamond cuts. This is also called as the maida biscuits. Try this easy sweet recipe at your home and let me know how easy is this as  i said. Now let us see how to make this biscuits.

Ingredients:


  1. All purpose flour/ Maida - 1 cup
  2. Sugar - 1/4 cup
  3. Ghee - 1 tsp
  4. Baking soda - 1/2 tsp
  5. Salt - a pinch
  6. Oil - for deep frying

Method:


  • Add sugar in the mixer and grind it to a fine powder.

  • In a mixing bowl add maida, powdered sugar, ghee, baking soda, salt and mix well.
  • Add water and knead it to a soft dough.

  • Set it aside for at-least 15 min.
  • After 15 mins knead it again and divide it to equal size balls.

  • Dust some flour and roll it as we do for chapathi , but it should be as thin as possible then only you will get a crunchy biscuits.



  • Cut it using a cutter or knife will do.
  • Heat oil in a pan for deep frying .



  • Drop the biscuits and fry till golden brown.
  • Now our biscuits are ready to taste!!
