Carrot Poriyal

Carrot Poriyal:

Carrot is a root vegetable which is healthy too. Carrot reduces cholesterol so those who want to lose weight can take carrot daily by raw or cooked. Also taking of carrot daily will makes our skin shine. Now lets come to the point , this carrot poriyal is a nice side dish for lunch and dinner, Lets see how to make this easy carrot poriyal.

Ingredients:


  1. Carrot - 1 cup (grated)
  2. Green Chillies - 2 nos (sliced)
  3. Small Onions  - 10 nos (chopped)
  4. Mustard seeds - 1 tsp
  5. Urad dhal - 1 tsp
  6. Turmeric powder - 1 pinch
  7. Asafoetida (perungayam) - 1 pinch
  8. Cumin seeds - 1 pinch
  9. Curry leaves - few 
  10. Coconut - 2 tsp (grated)
  11. Oil  -2 tsp


Method:


  • Heat a kadai and add 2 tsp of oil.
  • Add mustard seeds and urad dhal when it splutters add onions and green chillies and curry leaves and saute for a minute.


  • Now add grated carrot and saute in low flame .

  • Add Asafoetida , cumin powder, and turmeric powder  and salt and mix well. 
  • Allow it to cook for 5 min in low flame.
  • Switch of the stove and garnish with grated coconut.
