Tomato rice / Thakkali Satham / Tiffin box recipe / Simple tomato rice:
Tomato rice can be done in two different methods. One way is combined cooking and the other way is mixing of the tomato gravy with the steamed rice. Here i am going to demonstrate the second method which is my hubby's favorite food. He loves tomato rice only when it is cooked in the second method. It is very easy to make this recipe.
Ingredients:
- Tomato - 4 finely chopped
- Onion - 1 medium size (finely chopped)
- Green Chillies - 2 nos
- Ginger Garlic paste -1 tsp
- Mustard seeds - 1 tsp
- Urad dhal - 1 tsp
- Cumin seeds (jeeragam)- 1 tsp
- Fennel seeds (perunjeeragam)- 1 tsp
- Cloves - 2 nos
- Cardamom - 2 nos
- Cinnamon - 1 small stick
- Bay Leaf - 2 nos
- Red chilli powder - 1 tsp
- Turmeric powder - 1 pinch
- Coriander leaves - for granish
- Salt - as required
Method:
- Heat oil in a pan and allow mustard seeds , urad dhal to temper.
- Now add the cumin seeds,fennel seeds, cloves, cardamom, cinnamon and bay leaf.
- Now add the chopped onions and saute till translucent.
- Now add the chopped tomatoes and ginger garlic paste and cook till it is mashed well need not want to add water.
- Add Turmeric powder, chilli powder , salt and mix well.
- Saute for a minute and switch off the stove. now add coriander leaves .
- Add this mixture to the boiled rice and mix well.
- Add few drops of ghee in it.
- Now our tomato rice is ready.
