Masala Mini Idili / Mini idli Starter / Left over Idli Recipe

Masala Mini Idli:

          Masala mini idli is  a nice snacks or starter. This recipe is easy to make and also suitable for breakfast and dinner too. You can make this with the left over idlis , very quick to make and tasty to eat as well. Most of South Indian homes will have left over idlis, if you are using the whole idlis cut them into pieces and use them.      
   

Ingredients:

  1. Mini Idlis - 15 (nos)(or left over idlies cut into pieces)
  2. Onion - 1 (finely chopped)
  3. Green chillies - 2 (nos)
  4. Garlic - 4 nos
  5. Ginger - 1 tsp (finely chopped)
  6. Tomato sauce - 2 tsp
  7. Chilli powder - 1 tsp
  8. Turmeric powder - 1 tsp
  9. Asafoetida - 1 pinch
  10. Lemon - few drops
  11. Curry leaves - for garnish
  12. Coriander leaves - for garnish
  13. Oil - 1 tbsp
  14. Mustard seeds and urad dal - temper


Method:

  • Heat oil in a  pan allow mustard seeds and urad dal to temper.
  • Add ginger, garlic and saute till raw smell disappears, now add chopped onions and green chillies and saute for a minute.
  • Add turmeric powder , chilli powder, and asafoetida and mix well.
  • Now add idlis and tomato sauce and saute well.
  • switch off the stove and add curry leaves and coriander leaves and squeeze few lemon drops.
  • Now a yummy masala mini idli is ready to serve.

Ragi Roti /Ragi recipe

Ragi Roti

  Ragi Roti is a nice breakfast or dinner. Easy and simple recipe.Same procedure as pakoda,(Ragi Pakoda - http://rainisrecipe.blogspot.in/2015/02/ragi-pakoda-ragi-roti.html) the dough will not be tight when compared to it.

Ingredients:

·        Onion -1(finely chopped)
·        Green Chillies -2(finely chopped)
·        Ragi Flour – 1 cup
·        Salt – to taste
·        Coriander Leaves and Curry leaves
       Oil –for deep frying

Method:

·        Heat a tawa and sprinkle oil in it.
·        Take a hand full of dough and spread it over tawa using hands by touching water often.

·        Cook both the sides and take out from tawa.

·        Serve it with coconut chutney or peanut chutney.

Theeyal / Kerala Style Theeyal

Theeyal
It is very easy to prepare theeyal. This theeyal is of kerala type and it goes well with steamed rice.My kids love this very much…Sorry friends i missed to add the tamarind extract part in the gravy in my first version so this updated one for you.  now recipe for u.

Ingredients:
Dhaniya    -1 tbsp
Black pepper    -2 tsp
Coconut     -1 cup grated
Shallots     - 1 cup
Mustard seeds    - 1tsp
Fenugreek seeds   -1tsp
Chilli powder  - 1tsp
Coriander powder  - 2tsp
Tamarind - small lemon size
Curry leaves  - For garnishing
Method:
1.    Heat a pan and fry dhaniya and pepper and keep it aside.

2.    In the same pan fry grated coconut till it smells well and turns into brown color.




3.    Let the fried items cool, then grind into a fine paste.Soak the tamarind in hot water
4.    Heat oil in a pan and allow mustard seeds and fenugreek seeds to temper.
5.    Add the chopped shallots.(if very small shallots means need not want to chop)
6.    Saute till transculent. Now add dhaniya powder and chilli powder and sauté it. 

7.    Now add the grinded paste, and tamarind extract and allow it to boil. When raw smell disappears make the flame to simmer.
8.    Wait till the oil from the gravy separates.

9.    Garnish with curry leaves.


Now our kerala style theeyal is ready!!!

Carrot halwa

Carrot halwa:



Carrot halwa is a sweet which is prepared often because of its taste. You can prepare  this recipe quickly.
                                

Ingredients:

1.     Carrot – 1cup(grated)
2.     Sugar – 1 cup
3.     Milk- 500 ml
4.     Ghee – 2tblsp
5.     Cardamom -4 nos
6.     Cashew nuts – 10 nos

Method:

·        Boil the milk. Now add the grated carrot and stir well.




·        Let it cook in medium high flame. 

·        Add the sugar and mix well.

·        Allow the halwa to get thick mixture.
·        Add the cardamom powder and stir it.

·        Heat ghee in a pan and roast cashew nuts and put it in the halwa.
·        Pour the left over ghee in the halwa mixture.
·        Now carrot halwa is ready to serve.



Kambu koozh / Kambu Kool

Kambu koozh



          This kambu koozh recipe is simple to make and it is good for health.  In summer if we take this kozh , we feel fresh for the whole day. Now let us see how to make kambu kozh.

Ingredients:

1.     Kambu- 1 cup
2.     Butter milk(moor)-1 cup
3.     Salt- to taste

Method:

1.     Soak Kambu for 2-3 hrs.

2.     Grind this to a coarse paste. Add some water and keep it aside for 7-8 hrs
.
                                           After 7-8 hrs (as below)

3.     Add the paste in the pot and add water.(if u have 1 cup of kambu paste then add one and a half  a cup of water and mix it well.)

4.     Switch on the stove and stir continuously without taking the hand out.

5.     After the paste thickens switch off the stove and allow it to cool.

6.     Now add some  chopped small onions, buttermilk and salt for taste and serve it with moor milagai, vaththal.



Now kambu kozh is ready!!
